Veggie chili
Would also be good with meat.
Ingredients
Cans
- 1 can black beans
- 1 can corn
- 1 can kidney beans
- 1 can chickpeas
- 2 cans crushed or diced tomatoes
- 1 can veggie broth
Spices
- ½ tsp cayenne
- 2 ½ tbsp chili powder
- 1 ½ tsp paprika
- 1 tsp cumin
- ½ tsp coriander
Produce
- 1 onion
- 1 bell pepper
- 1 jalapeno
- 4 cloves garlic
- 1 sweet potato (or regular potato, butternut squash, etc.)
Add-Ons
- Greek yogurt
- Cheddar cheese
- Lime juice
- Cilantro
Recipe

Combine and sauté all produce. Add to crockpot or large pot.

Add all canned ingredients and spices. Add small amount of water until desired consistency.

Cook on low in crockpot for a few hours or simmer on stovetop until produce is fork tender and ingredients are combined.

Top with any and all add-ons.
